Beet Coconut Sugar Cookies

 

Valentine's Day is upon us, and rather than loathing a day filled with expectations, I really think we should reverse the script and make it a day to cultivate happiness and - gasp! - love ourselves. I don't know about you, but nothing tells me "I love me" like some pink, heart-shaped cookies that are filled with healthy ingredients. 

Chickpeas, cashew butter, and beet powder are the stars of the show. And if you don't feel like cutting them into hearts, you can also form this dough into balls. They won't flatten, so you'll have amazing round, bite-sized, fluffy cookies, or flatten them gently with a fork for a cute lines effect. Drizzle 'em with melted coconut butter and thank me on IG, cause let's be honest that's where I spend a lot of time these days. Can we be IG friends for life? Ummkay thanks.

Beet Coconut Sugar Cookies

INGREDIENTS

1 can chickpeas, rinsed and drained
1/2 cup cashew butter
1/2 cup melted coconut oil
1 egg
2 tbsp maple syrup
1/2 tsp vanilla extract
4 tsp beet powder

2 cups almond flour
1/2 tsp cinnamon
1 cup shredded coconut

1/4 cup Lucuma 
1 tbsp Goji powder  
1 tbsp goji powder
1/4 tsp sea salt
1 tsp baking powder

DIRECTIONS

Makes approximately 30 cookies. 

1. Mix all dry ingredients in large bowl.
2. Combine all wet ingredients + beet powder in food processor.
3. Mix wet ingredients into dry and stir until thoroughly blended.
4. Set dough in refrigerator for 10 minutes. Meanwhile, preheat oven to 350, and line baking sheet with parchment paper.
5. Form small balls of dough and place evenly on baking sheet. Or roll dough 1/2 inch thick and cut into shapes of your choice. Bake 10-13 minutes. Heads up, if you bake as balls, these cookies will not flatten, so they will be fluffy, round cookies. So good!

Excellent drizzled with coconut butter, eaten plain, dunked in almond milk, accompanied with a rose latté ... let your imagination run wild! Let cool completely before storing.
